Subananation
There is a process in chemistry called sublimation where a substance transitions from a solid to a gas without becoming a liquid in-between. My kitchen seems to have an atmosphere favorable for subananation where my banana's transition from under-ripe, green bananas, to overly ripe, brown/black bananas without transitioning through the tasty yellow phase:
